BURSA ULUDAG UNIVERSITY BUSINESS MODEL INNOVATION LABORATORY ACTIVITIES
In 2025, the REMODEL Project’s Business Model Innovation Laboratory (BUU BMI Lab) successfully collaborated with five hotels and one restaurant to co-create innovative and sustainable business models. Through field visits, in-depth interviews, and hands-on workshops, the project team worked closely with hospitality partners to explore challenges, generate creative solutions, and design strategies that balance competitiveness with sustainability. These collaborations demonstrate the project’s strong commitment to strengthening the hospitality sector with forward-looking practices rooted in local contexts.
Innovating with Bülbül Yuvası Boutique Hotel
After completing the three-pilot work, the first stop of the BMI Lab was Bülbül Yuvası Boutique Hotel in Foça, İzmir. The process began with in-depth interviews with the hotel’s owners, providing insights into the establishment’s history and vision. On the following day, the team engaged with the hotel manager, uncovering operational perspectives and challenges.
The highlight of the collaboration was a hands-on workshop, where hotel representatives and project researchers co-created new ideas for business model innovation. The session generated promising strategies designed to strengthen resilience, enrich guest experience, and adapt to evolving tourism dynamics. The REMODEL Project extends its appreciation to the Bülbül Yuvası family for their openness and valuable contributions.
Strengthening Competitiveness at Deniz Kabuğu Hotel
The second BMI Lab workshop was held at Deniz Kabuğu Hotel in İzmir, led by BMI Lab Staff of REMODEL Project. The session focused on analysing the hotel’s current business model and exploring opportunities to build long-term competitiveness. Key areas of discussion included:
- Enhancing customer satisfaction through tailored experiences,
- Developing strategies to differentiate the hotel in a crowded market,
- Strengthening financial sustainability with innovative service approaches.

Fostering Sustainability at Etenna Bungalow Hotel
The BMI Lab next visited Etenna Bungalow Hotel, hosting an interactive workshop with the project team and hotel representatives. The event emphasised sustainability as a driver of innovation in hospitality. Participants discussed the challenges of implementing eco-friendly practices in day-to-day operations and shared perspectives on enhancing guest experience through responsible management. Key highlights included:

The fourth stop was Yonja Anjelika Hotel, where BMI Lab activities brought together academic expertise and practical hospitality perspectives. The workshop was facilitated by BMI Lab staff. The discussions focused on sustainability strategies and hotel management practices, encouraging participants to share their views openly. Ideas generated during the session offered promising directions for adapting to shifting market dynamics and guest expectations.

The series continued with a visit to Ağva Park Mandalin Hotel, where BMI Lab staff facilitated a collaborative session.The workshop provided a meaningful opportunity to discuss:

- New strategies to enhance competitiveness in the market.

Collaboration with Selçuk Restaurant on Business Model Innovation

As part of the Remodel Project, the BUU BMI Lab has initiated a new collaboration with Selçuk Restaurant, one of the most iconic culinary landmarks located in Bursa Kültürpark.
Within the scope of this collaboration, BMI Lab conducted a Business Model Canvas study and developed a new business model aimed at supporting Selçuk Restaurant’s continued success. The project focused on integrating the restaurant’s rich tradition and long-standing reputation with modern approaches to sustainability, innovation, and value creation.
The BMI Lab team applied innovative methods and creative tools to help the restaurant strengthen its value propositionand ensure long-term strategic growth. We would like to extend our sincere gratitude to the Selçuk Restaurant team for their collaboration, openness, and commitment to innovation.
